Midweek Garden Salad Vibes

This summer has been a roasting hot one for most of us in the southern hemisphere and the vegetable garden is thriving. Having hot food does not always work in hot weather so we opt for something simple and light like a colourful and healthy garden salad on the side as we barbeque.

Ingredients

  • 1 Butternut Squash
  • 1 Red Onion
  • 1 Cucumber
  • 1 Yellow Pepper
  • 1/2 Can Tinned Sweetcorn
  • 1/2 Can Tinned Beans
  • Handful Cherry Tomatoes

Dressing

  • 1 tbsp Honey
  • 2 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • Fresh Basil
  • 3 Garlic Cloves
  • Black Pepper
  • Salt

Directions

Cut butternut into cubes drizzle some olive oil, mix together and make sure oil is well coated, roast for 30 minutes or until soft. Cut the onion, yellow pepper and cucumber into cubes as well, half the cherry tomatoes. Add all the ingredients to a large salad bowl and mix them together. Mix dressing ingredients together and pour all over salad the give it a final mix with salt and pepper to taste.
