We worry in January (Janworry) as it is a long and not so easy month, folks are stretching themselves with schools fees, fuel costs, bills, living expenses and just trying to survive. I was asked to come up with a simple budget friendly recipe because the price of things has skyrocketed and truth is salaries have remained the same for many people. This recipe is super easy to make, is quick, tasty and goes well with noodles or pasta.

15 minutes cooking time
Serves 4

Ingredients
- 3 Cloves of garlic
- 1 Large red onion
- 3 Smoked sausages
- Mushrooms fresh or dried (optional)
- Tinned tomatoes or tomato purée or paste or passata
From the Cupboard
- Mixed dried herbs
- Salt and pepper
- Cooking Oil
Directions
Add two tablespoons of oil to a large pan, add the chopped smoked sausages fry for 2 minutes until slightly browned .
Add in the onions chopped the same size as the sausage with the mushrooms if using fresh ones. Cook until the mushrooms are done, keep stirring so that nothing sticks to the pan.
Then add salt and pepper to taste, garlic and 1 tbsp of dried or fresh herbs, fry for a minute then add the passata or if using the tomato paste add half a cup of water and let it simmer for another minute and you can serve.

Mushrooms are currently in season as much as I have dried mushroom I love the fresh ones that the ladies sell on the street corners. Usually use just two sausages but added a third in case of second helpings brining total spent to K71.96 ($3.37).
