Bruschetta is a term traditional from Italy, an antipasto which consists of grilled bread rubbed with garlic, topped with olive oil and salt. There are many variations and may include toppings of tomato, vegetables, beans, cured meat, or cheese. Now, I realise that bread has a bit of a reputation because it rises in the yeast and sets in the waist, but you really should try these toasted beauties because they are full of flavour.
As many of us are still at home we are cooking more often and it is not always easy to be inspired but I guarantee that these few simple, affordable ingredients and combinations work. I must admit that not all are traditional but it is worth a try.

Classic Tomato & Basil
Simple tomato bruschetta as a classic Italian starter an easy fresh dish that is tasty and full of flavour even if you do not like tomatoes much. Chop then mix red and yellow tomatoes, garlic and basil, add olive oil and season. I used sliced bread but a baguette loaf sliced diagonally into thick slices will do.
Egg & Avocado
Pile the avocado, mashed or chopped and top with boiled egg on the toast sprinkle with seasoning and pine nuts (optonal).
Peanut Butter & Banana
Spread smooth or chunky peanut butter over your toast then top with banana slices, you can then sprinkle coconut flakes, cinnamon or a drizzle of honey.

Peach & Hummus
I had this sweet and tangy combination just experimenting and it worked we love it so much have it all the time now. Made the hummus as I usually do then topped with tinned peaches and sprinkled with sesame seeds. Simply delicious!
Cheese, Ham & Pear
Another classic combo, cheese, ham and pear slices with some fig jam on top.

Cucumber, Ham & Onion
Ideally I would first spread some cream cheese then cucumber shavings, ham and onion, but didn’t have any however the combination still worked. Will add some mayonnaise next time instead.
Pork Sausage & Cherry Tomato
Had leftover grilled pork sausage which was topped with cherry tomatoes then drizzled some green tomato chutney and sweet chilli sauce, just yummy!
