Winter Soup Made with Garden Cherry Tomatoes

Ever since I started cultivating a home garden, tomatoes have become my favorite summertime treat as they’re just so sweet, juicy and delicious. But when winter comes around, I’m sad to say goodbye to my tomatoes. So this dish is the perfect alternative for those of you who are in the same boat as me. This soup is sweet, warm and tasty, just like the tomatoes of summer. The intense tomato flavour comes from roasting the cherry tomatoes, this whole pot of soup only took a total of 30 minutes to make and is a great weeknight option especially during the harsh winter nights.


Servings: 4 | Preparation time: 5 minutes | Cooking time: 40 minutes


Had so many leftover tomatoes that we made some focaccia to have with the soup. All and all a great winter harvest can’t wait for the next planting season.
